Canned food is also often thought of as a non-nutritious food, but this is not the case.


The canned food is sterilized by a sterilizer, and the sterilization temperature is generally around 120 °C, while the sterilization temperature of vegetables and fruits is lower, generally 80-90 °C. At such temperatures, most of the nutrients in the can are well preserved, and only a few heat-labile vitamins, such as vitamin C, vitamin B6, and vitamin B9, are destroyed.


Even if cooking at home, sometimes the temperature can reach 200 ℃, and the sterilization temperature of canned food is not as high as that of cooking, and its nutrients should be better preserved than food cooked in ordinary ways.
